Honey-roast Parsnip, Carrot & Shallot Tart



This tart is just perfect for a cold winter's day like the one most of the country is currently experiencing. I'm spending the best part of the day tucked up on the sofa watching The Killing 2 and eating comfort food. I really like the fact this tart, from one of my favourite books, the Popina Book of Baking, is wholesome and pretty healthy.  The case is made with spelt flour and I used 0% Total Greek Yoghurt in the filling but it still completely hits the spot. If you haven't got this book I really recommend you do - every recipe is a winner.

I basically made the tart filling by roasting some carrots, parsnips and shallots with a little honey and olive oil.  Once they were roasted I stirred in a good handful of grated strong cheddar.  I lined a tart tin with the spelt pastry dough and mixed in another handful of grated cheddar to a small pot of greek yoghurt. I spread this mixture over the base before topping with the roasted vegetables. It was then baked for about 30 minutes at 200c. Quick, easy and delicious!

  1. That sounds really good. I love tarts, but hate making them because I hate making pastry. Spelt does make good pastry though doesn't it? I do make a roasted veg tart when pushed and put some ground hazelnuts in the pastry which gives it an an added note of deliciousness.

    Hmmm, not chocolate though I noticed ;-)

    1. This is the easiest pastry ever - its actually more of a pizza dough but bakes like pastry. Ummmm just wasn't digging the carrot chocolate combo ;-)

  2. I have the same book but have never made anything from it yet. I just drool at the pictures :) This tart looks delicious and healthy. I still have a lot of spelt flour so will give this a go.

  3. This looks so delicious! I love tarts but seldom make them! You've convinced me to give this a try! Wish you could deliver your tart to our Super Bowl party, it would be a huge hit!

  4. I must revisit this book. I've had a couple of almost successes and I really want everything to work because it looks so good in the book. Good to hear you've had success with it.

    I've been meaning to make this tart for ages, and you've made it look really good!

  8. There's something very comforting about roasted veg on a cold day. It looks a great tart to me and the healthy qualities are a big bonus.

  11. I love this book but have so far only baked the sweet recipes.
    This looks delicious and we have nothing in the house for dinner tonight except a few random vegetables so this could be it !!
